Gently and carefully make a hole in the top of the egg.
Pull away just enough shell to accommodate the nozzle of a piping bag.
Drain the egg ensuring you keep the contents of one egg shell to make the cake batter.
Immerse the eggs in saltwater for 30 minutes after rinsing them out thoroughly under running water. Ensure the eggs sink to the bottom of the bowl to be fully cleaned.
Re-rinse the egg shells and place them on kitchen paper to dry – hole side down.
Put the shells into aluminum foil inside a cupcake tin and pipe in the cake batter 3/4 of the way up inside the shell.
Once cooked and cooled, remove any excess batter from the shells.
What an awesome cake!
You could even decorate the shells if you're feeling artistic.
